Antioxidanty jsou látky, které chrání živý organismus před působením volných radikálů. Antioxidanty, které si živý organismus není schopen syntetizovat sám, nazýváme exogenními antioxidanty. Porovnávýna byla antioxidační kapacita resveratrolu a vybraných katecholů. Bylo použito 8 katecholů, resveratrol a 12 reálných vzorků. Pro stanovení antioxidační kapacity byla použita metoda chemiluminiscenční TEAC.Antioxidants are compounds, which protect a living organism against free radicals. Antioxidants are divided into two groups: exogenous antioxidants and endogenous antioxidants. There was determined and compared the antioxidant capacity of resveratrol and catechols. For this study were used 8 catechols, resveratrol and 12 beverages. For the determination of total antioxidant capacity there it was used the method called Trolox Equivalent Antioxidant Capacity (TEAC).
